Sweet and Savory Kale

2 tablespoons Dijon Mustard

2 tablespoons brown sugar

4 tablespoons red wine vinegar

4 cups of water

2 bags of kale with stems removed (fresh)

Optional ingredients;

1/4 cup dried cranberries

salt and pepper to taste

1/4 cup sliced almonds


1. put kale and water in a large stock pot. Cover and simmer on low heat until wilted and dark green (about an hour)

2. Mix the vinegar, brown mustard and brown sugar together til smooth. Pour over kale.

Optional directions if you use the optional ingrrdients

Stir in the dried cranberries to the kale and water and boil uncovered until the cranberries have softened, about 15 minutes season to taste with salt and pepper. sprinkle with sliced almonds before serving.

Instead of the mustard dressing, eat with chow chow
